In 2003, Jimmy Moore was suffering from high blood pressure, a bad lipid profile, high blood sugar, breathing difficulties and many of the other discomforts caused by morbid obesity. He weighed 410 pounds and wore a size 62 pants. After his mother-in-law bought him a book by Dr. Robert C. Atkins about losing weight on a low carb diet, he made a new year&#039;s resolution to lose weight. He began January 1, 2004 and ended December 31 180 pounds lighter! If this is not remarkable enough, he has kept the weight off now for over 5 years!

Our Updates

Here at Broad River Pastures, the ducks are now moved onto pasture near our new pond. They are ignoring their soy-free rations in favor of frog eggs and polliwogs in the pond. They&#039;re really getting a workout and strengthening their legs and wings with swimming, &quot;running&quot; on the water, and diving. The field fence is up, and we&#039;re looking at some ewes this weekend. Our sheltie, Nicky, is suffering from the heat and became dehydrated. He is spending a day or two at a nearby animal hospital for IV treatment and monitoring. Lucy and Belle inherited one of the duck pools and have been digging dusty nests to keep cool in the 100 degree June heat. Time for more rain!

Our guest interview for this show was Dr. Thomas Cowan, a holistic MD who has over 20 years of medical experience. He relies heavily on the work of Rudolph Steiner, an Austrian mystick who founded a philosophic movement called &quot;anthroposophy&quot; or &quot;human wisdom.&quot; Steiner also taught that the human being has four &quot;bodies&quot; or spheres of activity and that humans enjoy the best health when these four spheres are in harmony or balance. The four interlocking bodies are Physical, Life-Force, Emotional, and Mental. In The Fourfold Path to Healing, Cowan dedicates the first four chapters of his book to these four bodies. They are: Chapter 1 (by Sally Fallon Morrel) &quot;Nutrition: Healing the Physical Body,&quot; Chapter 2 &quot;Therapeutics: Healing the Life-Force Body,&quot; Chapter 3 (by Jaimen McMillan) &quot;Movement: Healing the Emotional Body,&quot; and Chapter 4 &quot;Meditation: Healing the Mental Body.&quot;



When asked about some important guidelines in relation to food, Dr. Cowan explained that concept of place was very important. Food needs to be both locally and sustainably grown. In addition, food has strong connections to the local community. The microorganisms in your home provide the bacteria to your intestinal tract. He also stated that he has never found a healthy group of vegans or vegetarians and that fat is more important than protein. It is important to develop a close relationship to your food sources and to use the whole animal. Bones in the form of bone broths or marrow provide important minerals. (Sally Fallon suggests that every town needs a &quot;broth-al&quot; to help obtain this) Muscle meats were the least important in traditional cultures.

Now she assists others who are making the transition from vegan and vegetarian to omnivore. Even though the vegan or vegetarian reader is her targeted audience, the book resonates strongly with promoters of healthy, traditional and sustainable food, such as Sally Fallon Morrell, founder of the Weston A. Price Foundation. Lierre heavily researched issues of diet and nutrition, agriculture, our food system, and the destruction of the ecosystem.

Parts of the book read like a screenplay for Food, Inc (http://www.foodincmovie.com/), even though Keith has yet to see the film. She covers the fallacy of feeding grain to ruminants, the benefits of polyculture, and how a vegan diet designed to do no harm leaves thousands of life forms destroyed in order to produce a single meal.

She also outlines the grave damage that can be caused by eating large quantities of heavily processed soy made into fake foods. This topic has been widely explored by the Weston A. His excitement about its benefits for clients is contagious. Metabolic typing is a breakthrough in nutritional science. It is a holistic approach that treats the person, not the condition. As Weston A. Price discovered, there is no one healthy diet. Everyone is different and has unique nutritional needs. This is due to differing rates of cellular metabolism and genetically based requirements. By eating the right food for your type, you can experience ample energy, no food cravings, stable mood, and good mental clarity. Therefore, eating whole, natural foods is not enough if you are reading the wrong kinds of food for you. Consultation with Linda DeFever

After the interview, Jon and I hooked up with Linda DeFever (http://tinyurl.com/l3jgkm) for a consultation. She is a certified metabolic typing advisor who was trained by Bill Wolcott and Dodie Anderson. Linda is a listener and a Weston A. Price chapter leader. We took the Metabolic Typing questionnaire to determine our metabolic type. We received a detailed report of our test results and recommendations, along with a color-coded sheet that lists our diet plan and the correct proportion of proteins, carbohydrates, and fats that are appropriate for us. We also received Diet Record Check logs so we can easily monitor how our meals impact our energy, mood, and mental clarity. Linda reviewed the plan with me by telephone, but Jon is still looking for a time to schedule his follow up.

Linda is very motivated to assist me in using a modified diet plan to assist me in reducing my chronic inflammation issues. Guidance is important in meeting success with metabolic typing. The end of summer, however, is a very busy and stressful time for me. I need to absorb the information and ease into it when the timing is right for me. I&#039;m very grateful to know that Linda will be there for me when the time is right. While we are still receiving CSA shares and I am trying out recipes from Mastering the Art of French Cooking (http://tinyurl.com/ns4umq), it will be hard to plan the best meals. Grass Finished Beef

We&#039;ve been buying beef from Bill and Di Hodge for the past 7 years and have never been disappointed with their product. Bill is the first farmer we purchased from directly and developed a relationship with. We admire the work he is doing with rotational grazing (http://attra.ncat.org/attra-pub/rotategr.html) .

According to Hodge, a beef cow is kept for an average of 6 years before making a profit in regard to breeding. However, most cows in the industrial system do not live past the age of 5. Hodge&#039;s cows live 15-18 years and when Cathy visited his ranch she saw one who was 19.

Supporting Sustainable Farmers

On twitter, Cathy has noticed a movement that associates itself with sustainable food called &quot;Meatless Monday.&quot; Michael Pollan recommends eating less meat. However, we concur with Lisa M. Hamilton:

In order for pasture-based livestock to become a significant part of the meat industry, we need to eat more of its meat, not less. As it is, grass-fed beef accounts for less than one percent of American beef consumption, and numbers for chicken and pork hardly register. Even where the industry is growing, it is stunted by inadequate infrastructure. The greatest challenge is a lack of small-scale slaughterhouses ...but the industry also suffers from a dearth of research, outreach for new producers, and investment in breeding for pasture-based systems. And those things will change only as the market grows. So if you want to use your food choices to impact climate change, by all means follow Dr. Pachauri&#039;s suggestion for a meatless Monday. But on Tuesday, have a grass-fed burger-and feel good about it.

As the name of his website indicates, cholesterol is essential to health. In the first part of the interview Chris explains its essential role in brain health and the delivery of fat soluble vitamins.

He summarized recommendations for heart health as a series of action steps to take: 1) Avoid excessive consumption of Omega 6 fats, 2) Eat a diet rich in antioxidants from fresh fruits and vegetables and supplementation with vitamin E and CoQ10, 3) Encourage efficient metabolism by monitoring your thyroid hormone, consuming sufficient iodine and selenium, and avoiding flouride, bromide, and chlorine.

We have a great Podcast this week, and an extended one due to our interview with Chris Masterjohn. Chris is the creator and maintainer of Cholesterol-And-Health.Com (http://www.cholesterol-and-health.com/index.html) , a website dedicated to providing accurate information about cholesterol and cholesterol-rich foods.

He has authored several articles appearing in Wise Traditions in Food, Farming and the Healing Arts - the quarterly journal published by the Weston A. Price Foundation (http://www.westonaprice.org/splash_2.htm) . His most recent article is in the Spring, 2009 edition.

Chris has also authored two items in peer-reviewed journals. The first is a letter published in the Journal of the American College of Cardiology criticizing the conclusions of a study on saturated fat. The second is full-length article in a 2007 issue of the journal Medical Hypothese s in which he proposes a molecular mechanism of vitamin D toxicity.

He is currently a graduate student at the University of Connecticut, pursuing a PhD in Nutritional Science with a specialty in Biochemical and Molecular Nutrition. I predict that we will be hearing much more about Chris and his research in the future.



Chris talked with me for about an hour last week on the topic of cod liver oil and answered my long list of questions. He elaborated on the historic use of cod liver oil in preventing and curing disease, why it has fallen out of favor, recent attacks by the Vitamin D Council and Dr. Joseph Mercola, and the benefits of fermentation.
