In 2003, Jimmy Moore was suffering from high blood pressure, a bad lipid profile, high blood sugar, breathing difficulties and many of the other discomforts caused by morbid obesity. He weighed 410 pounds and wore a size 62 pants. After his mother-in-law bought him a book by Dr. Robert C. Atkins about losing weight on a low carb diet, he made a new year&#039;s resolution to lose weight. He began January 1, 2004 and ended December 31 180 pounds lighter! If this is not remarkable enough, he has kept the weight off now for over 5 years!

Our Updates

Here at Broad River Pastures, the ducks are now moved onto pasture near our new pond. They are ignoring their soy-free rations in favor of frog eggs and polliwogs in the pond. They&#039;re really getting a workout and strengthening their legs and wings with swimming, &quot;running&quot; on the water, and diving. The field fence is up, and we&#039;re looking at some ewes this weekend. Our sheltie, Nicky, is suffering from the heat and became dehydrated. He is spending a day or two at a nearby animal hospital for IV treatment and monitoring. Lucy and Belle inherited one of the duck pools and have been digging dusty nests to keep cool in the 100 degree June heat. Time for more rain!

In December, 2008, Nathan Winters (aka Follow Nathan (http://www.follownathan.org/index.php)) left the East Coast on his bicycle to follow his dream. After seeing the encroachment of suburban sprawl into his native Vermont, he left to learn more about agricultural communities and the food system across the United States. In this week&#039;s podcast interview, Nathan chats with us about his adventures and misadventures along the way, his admiration for farmers of all kinds, and his hope for the healing of the land and its people through sustainable agriculture.

Jon and I are so inspired by the recent renewal of small farms by young people in our children&#039;s generation. They are the future of American farming. Nathan is a part of this movement. He not only works on a sustainable farm (http://www.applecheekfarm.com/), but he shares the stories of other farmers through his #ag4all blog (http://www.follownathan.org/ag4all), YouTube videos (http://www.youtube.com/user/follownathan#g/u), and upcoming book. Nathan talked with us about becoming a food investor rather than a food consumer. Rather than choosing food based on its price today, think about the price of that food, the miles it has traveled, the way it was grown, and the cost in tax subsidies, fossil fuels, toxic additives to the environment, and fair trade with the producer. He encouraged our listeners to make informed choices that make a difference.

Nathan has recently learned about the Weston A. Price Foundation (http://www.westonaprice.org/) through Applecheek Farm. The idea of eating nutrient-dense food that is locally grown appeals to him greatly. We talked to him about how we are learning to feed the soil first through Acres USA (http://www.acresusa.com/magazines/magazine.htm) and the concept of brix (http://www.highbrixgardens.com/what-is-brix.html) as a measure of mineral density in food.

Our guest interview for this show was Dr. Thomas Cowan, a holistic MD who has over 20 years of medical experience. He relies heavily on the work of Rudolph Steiner, an Austrian mystick who founded a philosophic movement called &quot;anthroposophy&quot; or &quot;human wisdom.&quot; Steiner also taught that the human being has four &quot;bodies&quot; or spheres of activity and that humans enjoy the best health when these four spheres are in harmony or balance. The four interlocking bodies are Physical, Life-Force, Emotional, and Mental. In The Fourfold Path to Healing, Cowan dedicates the first four chapters of his book to these four bodies. They are: Chapter 1 (by Sally Fallon Morrel) &quot;Nutrition: Healing the Physical Body,&quot; Chapter 2 &quot;Therapeutics: Healing the Life-Force Body,&quot; Chapter 3 (by Jaimen McMillan) &quot;Movement: Healing the Emotional Body,&quot; and Chapter 4 &quot;Meditation: Healing the Mental Body.&quot;



When asked about some important guidelines in relation to food, Dr. Cowan explained that concept of place was very important. Food needs to be both locally and sustainably grown. In addition, food has strong connections to the local community. The microorganisms in your home provide the bacteria to your intestinal tract. He also stated that he has never found a healthy group of vegans or vegetarians and that fat is more important than protein. It is important to develop a close relationship to your food sources and to use the whole animal. Bones in the form of bone broths or marrow provide important minerals. (Sally Fallon suggests that every town needs a &quot;broth-al&quot; to help obtain this) Muscle meats were the least important in traditional cultures.

This &quot;diet&quot; does not include counting calories, and is safe and healthy enough to adopt for a lifetime rather than a temporary fix. Acceptable foods include nutrient-rich bone broths, organ meats, fresh vegetables, and small amounts of fruit and soaked grains. The book has a very easy-to-read style full of interesting historical facts. It is very accessible to the average reader. For many of you, the diet might seem very strange or difficult for you to implement, as it involves avoiding processed foods. For Jon and I, this kind of eating is part of our daily life. When we stray from this, our body soon reminds us to return to healthier habits.

For breakfast this morning I made organic (traditional but not local) coffee with raw heavy cream from grass fed Jersey cows, some local bacon from pastured pigs, and a lightly scrambled egg from local pastured heritage hens topped with chevre made by a local farmer from raw Saanen goat milk. I chased it down with a cup of raw goats milk. This is a typical breakfast in the Payne household (lucky us!) and one that would be endorsed on The Liberation diet. With this high fat, normal carb meal, there are no spikes in insulin so I can get by without snacking for the next 5 hours until lunch.

Karen, a master food preserver, lives on a ranch in Idaho where she raises South African Boer goats (for meat) and vegetables. In spite of a small growing season, she manages to produce a large bounty of produce for her family. By preserving her harvest, she and her husband enjoy local, sustainable food year round. Food preservation techniques used to be handed down from mother to daughter, but many of these traditions have been lost over the last 40 years as modern, processed, convenient foods filled the supermarket shelves.

Karen&#039;s book is a good beginner text that gives newbies the basics in a wide variety of skills including food safety, freezing, canning, pickling and fermenting, relishes, jams and jellies, drying, salting, smoking and root cellaring. Learning to preserve your sustainable, seasonal food can save you money, as well!

I&#039;ve used a couple of recipes from the book and they were easy to do from her clear directions. I put up 7 pints of Wilma&#039;s Bread and Butter Pickles using my own homegrown cucumbers. Karen describes these as &quot;the best you will ever find,&quot; and I have to agree. They include 3 ingredients I haven&#039;t used in bread and butter pickles before. I&#039;ve also put up a beef brisket from Natures Harmony Farm using her corned beef recipe. I&#039;ve made this once before from a Julia Child recipe. I need to wait another three weeks to see how it stacks up, since the corning process takes 4 weeks.

One reason I&#039;ve been hesitant to attempt this is insecurity about what might go wrong at each step. Karen includes a thorough troubleshooting section to address these concerns, detailing what to expect when things are going right and how to know when it has gone wrong.

Are you eating Franken-foods? GMOs are Everywhere

Smith lives with his wife, he is surrounded by fields of corn, soy, canola, and cotton that have been genetically modified with bacteria to allow these crops to either eat poison, meaning that they are herbicide tolerant, or they produce their own poison in order to kill insects. Scientific studies confirm that these foods are very dangerous to people and animals.

Smith&#039;s book Seeds of Deception (http://astore.amazon.com/ournatlif-20/detail/0972966587) is the best-selling book on GMOs. However, his more recently published Genetic Roulette: the Documented Health Risks of Genetically Modified Food (http://astore.amazon.com/ournatlif-20/detail/0972966528), makes the topic greatly accessible. Instead of using a narrative format, Jeffrey uses easy-to-find, bulleted facts about the scientifically documented dangers and risks of GMO food. Quoting from Amazon reviewer C. J. Robinson, &quot;The layout of the book is an exemplar of clarity and should serve as the model for any reference book. It is designed to make the material accessible to three levels of reader: scanners, casual readers, and those who want detail. Each double-page spread is devoted to a problem with GM foods, with the left-hand page having the topic heading, a quote by an expert, and a few summarizing bullet points; the right-hand page gives technical detail. You don&#039;t need a science background to understand it. While the book is not bedtime reading, terms are defined and the boggle factor is kept low. The table of contents enables the reader to scan the problems with GM food and quickly to access the evidence on each. &quot;

This comprehensive book was written as a combination executive summary brochure and textbook, making it very easy to readily locate pertinent information. It is written in four parts to include heavily documented evidence for these assertions: 1) There are documented health risks for genetically engineered food; 2) the regulation of GM foods is inadequate to protect public health; 3) industry studies are not competent to identify most of the unpredicted side effects; and 4) there are serious flaws in the arguments used to justify GM crops.

Now she assists others who are making the transition from vegan and vegetarian to omnivore. Even though the vegan or vegetarian reader is her targeted audience, the book resonates strongly with promoters of healthy, traditional and sustainable food, such as Sally Fallon Morrell, founder of the Weston A. Price Foundation. Lierre heavily researched issues of diet and nutrition, agriculture, our food system, and the destruction of the ecosystem.

Parts of the book read like a screenplay for Food, Inc (http://www.foodincmovie.com/), even though Keith has yet to see the film. She covers the fallacy of feeding grain to ruminants, the benefits of polyculture, and how a vegan diet designed to do no harm leaves thousands of life forms destroyed in order to produce a single meal.

She also outlines the grave damage that can be caused by eating large quantities of heavily processed soy made into fake foods. This topic has been widely explored by the Weston A. Price Foundation (http://www.westonaprice.org/soy/index.html). Physician Michael Eades, whose work is cited in the book, recently featured a review (http://www.proteinpower.com/drmike/lipid-hypothesis/the-vegetarian-myth/) on his blog.

We&#039;ve been buying produce from Lynn and Chuck since we discovered their CSA through Local Harvest (http://www.localharvest.org/) 3 seasons ago. When we first contacted them, we were put on a waiting list. However, one shareholder had toddler triplets. The trip to the farm along with three sets of car seats was just too much for the young family. We were able to buy out their share mid season, when produce was at its peak.

It seems inconceivable now that we were uninformed about Community Supported Agriculture (http://www.wilson.edu/wilson/asp/content.asp?id=804) for so long, and we learned about it from a surprising source. My friend Tammy Billups (http://www.tammybillups.com/) told me about her favorite charity, Heifer International (http://www.heifer.org/site/c.edJRKQNiFiG/b.204586/?msource=kw4848&amp;gclid=CKzmiNSelJwCFSBN5QodAx7rcw). It soon became our favorite charity, too. After donating to Heifer, we were subscribed to their wonderful journal, World Ark. World Ark is a wealth of information about sustainable food and how it can ease hunger world wide. It was one of their articles that informed me about CSAs and the Local Harvest website. World Ark also introduced us to Will Allen (http://www.heifer.org/site/c.edJRKQNiFiG/b.4993465/) of Growing Power (http://www.growingpower.org/), the urban farmer in Milwaukee who raised our red wigglers (http://www.ournaturallife.com/blog/?p=265).

Lynn, a former science teacher, not only helps feed 75 families on 3 acres of her 17 acre farm, but is also the curriculum director for Georgia Organics (http://www.georgiaorganics.org/), leads educational field trips of her farm, and teaches classes in organic farming methods. She strongly values the camaraderie of these activities, which involve sharing the work, sharing meals, and building community.

I took one of Lynn&#039;s food preservation classes a couple summers ago and enjoyed the communal experience of working in the kitchen with several other women on July evening putting up tomato sauce using Barbara Kingolver&#039;s recipe from Animal, Vegetable, Miracle (http://astore.amazon.com/ournatlif-20/detail/0060852569).

We are proud to feature sustainable farmers on our show because they are our heroes. We support them any way we can. Our favorite means of support, is of course, to enjoy their food on our plate three times a day!
